
Kale Avocado Salad
Ingredients:
1 head kale, shredded
1 avocado
1/4 red onion chopped
2 tbsp olive oil
1 lemon
Celtic sea salt or Himalayan salt, to taste
1/2 tsp cayenne
Directions:
De-stem the kale and chop crosswise into small pieces. Place into a mixing
bowl and massage along with the olive oil, lemon juice, avocado and salt, working
well with your hands until the leaves are well coated in the mixture (this is a crucial step to create "cooked" effect) . Add in
the onion and cayenne, blending well to
combine.
