Warm Maple Spinach Salad with Pomegranates and Pecan Crusted Goat Cheese

Ingredients: 

1 12oz bag of organic spinach

1⁄2 cup pomegranate seeds

½ cup of pecans, chopped or finely ground

1 egg

1 log of fresh goat cheese

Olive oil

 

Warm Maple Vinaigrette:

1-tablespoon maple syrup 

1-tablespoon red wine vinegar/apple cider vinegar 

1-tablespoon organic cold pressed olive oil 

Pinch salt 

 

Instructions: 

  1. Cut goat cheese into bite sized patties.
  2. In a small bowl, crack egg and beat.  Line egg bowl next to bowl of pecans.
  3. Place goat cheese in egg mixture then in pecan mixture to coat.
  4. In a small pan heat oil over medium heat. Place goat cheese rounds in pan and sear both sides until slightly brown, 2-3 minutes a side.
  5. Meanwhile, combine dressing ingredients and set aside
  6. In a large bowl, combine toss together spinach, pomegranate seeds and dressing. Serve with goat cheese on top.
