b12 Energy Mac and "Cheese" (Gluten Free, Dairy Free)
Ingredients:
1 8oz pkg. Brown Rice Pasta (lundberg is my favorite for the extra fiber)
2-½ cups plain almond milk or non-dairy milk of choice
2-½ tbsp coconut flour
4 tbsp nutritional yeast flakes
1 ½ tsp tamari
1/2 tbsp garlic powder
2 tbsp non- hydrogenated
vegan butter (earth balance)
1 tsp dry mustard
Instructions:
Whisk together milk, flour, yeast,
tamari, garlic, mustard and butter in
saucepan.
Bring to boil then lower heat and simmer 5 minutes. Meanwhile, cook pasta according to package
directions. Drain, and toss with
cheese sauce.
*Optional- Pour mac and cheese into a 9x9 pan. Sprinkle gluten-free breadcrumbs on top to coat. Place in over under broiler for 3-4 minutes until crisp.
