Glowing Salad

1 bunch of kale, shredded

1 shallot, minced

2 tbsp vega antioxidant oil

½ tsp Himalayan salt or celtic sea salt

1 lemon

1 cup diced carrots

1 red pepper, chopped

1 cup chopped broccoli

1 avocado, diced

1 tomato, diced

1/3 cup sunflower seeds 

Directions:

In a small bowl, whisk together shallot, oil, salt, and lemon. Set aside. In a large bowl, add shredded kale.  Toss in dressing and massage kale with hands to create wilted/cooked effect (this step is crucial).  Toss in remaining ingredients and serve.

Serve with wild Alaskan salmon for the PERFECT glowing meal!
